New Mexico Red is a traditional Southwestern chilli, famous for its use in red chilli sauce (red chile) and classic New Mexican cuisine. It’s the mature red stage of New Mexico–type green chiles, prized for flavour over fire.

These plants produce long, smooth pods that ripen from green to a deep, glossy red. The heat is mild to medium, making it perfect for roasting, drying, and grinding into rich, aromatic chilli powder.
